Dips are great for the road. They’re easy to prepare, easy to store, and all you need is a bag of chips on hand.
If you’ve ever had a queso dip, you know how addictive it can be — one chip always turns into half a bag before you know it. What could make a queso dip even better? Chicken and buffalo sauce! Creamy, spicy, savory… this dip truly has it all.
When Sarasota’s Barbara Kabobel makes her tangy, buffalo chicken dip, “it just disappears.” This time, it won her the first-place prize in the “Dips and Salsa” category, along with bragging rights. Barbara reports that one of the many pleasures of rambling through 47 states with her husband Jerry is “window shopping” for RVs. “I get to dream about all these great motorhomes,” she enthuses.
Barbara’s Buffalo Chicken Dip
- 1 package (8 oz.) softened cream cheese
- 1 small can (9 oz.) chicken, drained and shredded
- 1/2 cup blue cheese salad dressing
- 1/2 cup crumbled blue cheese
- 1/2 cup hot sauce, or less to taste
Topping: grated cheddar cheese
Mix together everything except cheddar; spread mixture evenly in ovenproof dish. Bake 15 minutes at 350 degrees. Stir. Sprinkle cheddar cheese on top; bake 5 minutes more. Serve warm.
