This ever-popular chicken dish infused with honey, curry, soy sauce and sesame seeds will instantly transport you to a sunny island. To complete the experience, serve the glazed poultry over steamed rice for a hearty meal. Because the muscles are worked more, drumsticks are tender. If you compare to a steer, it’s like comparing a filet to a shank.
1/4 cup honey
1 tablespoon lemon juice
1 tablespoon yellow mustard
1 tablespoon curry powder
1 teaspoon soy sauce
2 tablespoons sesame seeds
2 pounds chicken drumsticks
Fresh parsley, for garnish
Combine honey, lemon juice, mustard, curry and soy sauce in a bowl or food-safe plastic bag. Add drumsticks and marinate chicken for 1 hour.
Preheat microwave-convection oven to 400 degrees Fahrenheit. Remove chicken from marinade, but reserve marinade for later use. Sprinkle both sides of chicken with sesame seeds and place in a dish on the low rack (position the thick part of the drumstick to the outside). Cook 20 to 22 minutes on convection high/mix/roast. Place cooked chicken in a serving platter. Heat reserved marinade 2 to 3 minutes on high (100%). Pour hot glaze over drumsticks. Garnish with parsley.
